Q: What’s your cooking background?

Karen: From an early age I was enamored with food and the connection between family, culture, heritage and customs that create ritual meals. Family celebrations and good times all begin and end at the table.


Karen’s career highlights include 11 years with Chicago’s famed Lettuce Entertain You, a stint as the head chef of La Casina Dei Tigli in Tuscany, Italy, and several years in the kitchen of Il Fornaio in Beverly Hills.


Q: Where did you grow up? What kind of food did you grow up with?

Karen: My youth was spent as a traditional valley girl in the suburbs of Los Angeles. My mother was a burgeoning foodie and took her family on the ride. From the age of 13 I spent my weekends working at the Kosher catering hall that my mother managed. I fell in love the bustle and smells of the kitchen, the comradery of the crew and working together to supply a delicious meal fit for the celebration at hand.


Karen has a degree from Mesa College San Diego, CA, in Food Science and is ServSafe certified. Most recently she has focused on iconic foods as the chef for the Tapatio Hot Sauce company as well as the Creative Chef for Little Toni’s “since 1946.”

Q: What can you tell us about the dish you’re serving today (Chicken Satay on Coconut Rice)? What inspired it?

Karen: When I was a young traveler I spent some time in Amsterdam and I spent my time exploring the exotic flavors from parts of the world I hadn’t known. I stumbled upon an Indonesian restaurant that was serving Rijsttafel which literally means rice table. Think Indonesian tapas, several tasty dishes all served with aromatic coconut rice. My dish is inspired by my memories of this dish as it was served then and not the quick stick version we have come to know here.
