“I believe my Shrimp Po’Boy is pretty dang authentic.”

Q: What is your cooking background?

Gabby: My mom and dad immigrated from Jamaica when they were teenagers. To this day, my dad has not had American fast food. He believes food is so central to our health and happiness; he held on tight to all his favorite recipes and made it a point to make them for me and my siblings when we were young.

Crispy breaded and fried cajun shrimp on loaf topped with a creole inspired tangy chipotle aioli, on a bed of lettuce with pickled onions. Enjoy!

As I got older and realized different cuisines were so fascinating, I taught myself how to cook them by watching the Food Network religiously. I have probably seen every episode of Chopped 3 times through, and that is how I learned why people like certain foods, and how you can prepare almost anything with a good foundation, technique, and care for the food you’re putting out. I’ve been cooking consistently for about 5 years. I wanted to be able to have a wide range of dishes I can execute well, so my future children would be open not only to foods that relate to their nationality, but all foods.

Q: What’s your favorite food memory?

Gabby: My favorite food memory was watching my great aunt fry chicken for us every Sunday. She would buy probably 5 pounds of party wings, get up at the crack of dawn, meticulously brine, bread, and fry them all day. I remember her smacking me and my brother’s hands away whenever we tried to steal a piece before she was done. She never shared her seasoned flour recipe with me. Years of me badgering her and all I ever got was a “You know.” I am not sure I have it perfect yet, but I can’t wait to wake up in the mornings and provide that warm comfort that I had as a kid, which I will never forget.

Q: Anything else we should know about you and your cooking?

Gabby: I love taking feedback, and I love learning. I am so excited to share my love of good food with everyone. There is a game I love to play with people: show me an ingredient that you think that you don’t like, and I promise I can change your mind with just one dish. I’m excited to serve you all!
