Q: What’s your cooking background?

Ivan: I went to Le Cordon Bleu back in 2008 and learned how to cook. On top of that my mom is a great chef on her own and I’ve been learning her recipes that have been passed down by grandma.

Ivan: I use nothing but fresh ingredients in my menu. As a kid these were my favorite dishes to eat and here I am now making them with a twist of my taste.

Q: What do you think about when you make these dishes?

Ivan: I think about Mexico and my culture. Think about family gatherings. Tacos are more enjoyable when you are with your loved ones. My favorite food memory is being a kid around aunts and uncles eating the food I like to make now.

Q: Where did you grow up? What kind of food did you grow up with?

Ivan: I grew up in Avondale park here in Chicago. I always grew up eating Mexican food with salsas and lots of tortillas.
