Q: What can you tell us about the dish you’re making and what inspired it?
Kourtney: For my 1st Shmeal I’ll be preparing “Vegan Football Chili with a Buttered Agave Glazed Croissant.” This chili is seasoned to perfection with vegan soy ground beef, onion, celery, tomatoes, chili beans, black beans, kidney beans, green and red bell peppers, and corn.
I will also be making a meat version of the chili, “Chicken Football Chili with a Buttered Agave Glazed Croissant” This chili is seasoned to perfection with small strips of grilled chicken, onion, celery, tomatoes, chili beans, black beans, kidney beans, green and red bell peppers, and corn.
All Shmeals will have the option to be served with freshly chopped chives, cilantro, avocado and shredded cheese. For those of you who are like me and prefer a wholesome “Chili Mac” upon request I will be adding a small side of cooked noodles with your Shmeal.
Q: Where’d you grow up? What kind of food did you grow up with?
Kourtney: I grew up on the west side of Chicago right across from the United Center, but my food was always changing as my mother was a travel agent gearing us to travel around the world and inspiring tons of different flavorful recipes.
Q: What’s your cooking background?
Kourtney: As a child, I loved watching the food network! I originally began baking, which then sparked my interest in cooking. Friends and family members responded positively from trying my food and eventually began putting in their own separate requests.
Q: Anything else we should know about you and your cooking?
Kourtney: I enjoy eating and cooking vegan meals to assure that I am feeding my body the best ingredients possible. However I wasn’t always a vegan and I understand that people enjoy their meat, so I will always try to make a meat option to every meal that I cook.
