Q: What’s your cooking background?
Logan: I am a classically trained professional Chef. I currently work at the Hyatt Regency Chicago in downtown Chicago. I’ve been fortunate enough to have cooked all over the country and have done everything from frying chicken for thousands of people to preparing Michelin Star food along some of the greatest Chefs in the nation.

Q: What can you tell us about the dish you’re making and what inspired it?
Logan: One of my first dishes I will be making is 10 hour smoked brisket. I have a 50 gallon smoker in my back yard that I use constantly. I was inspired by Aaron Franklin BBQ. I recently bought his cook book and have been reading it obsessively.

Q: Who do you think about when you make this dish? What does it remind you of?
Logan: It reminds me of my time spent in Kentucky and my daughter. When she was born, I had 3 weeks of nothing to do except take care of my child, so I taught myself how to smoke brisket on a ancient smoker that I fixed in my backyard.
Q: What’s your favorite food memory?
Logan: One of my favorite food memories will always be baking cookies with my momma.

Q: Anything else we should know about you and your cooking?
Logan: I cook from the heart and cook things that take time and care. Working in a professional kitchen, you sometimes get burned out on the daily grind and preparing dishes for hundreds and hundreds of people. So this is an outlet for me to express myself in a way.
