Q: What can you tell us about the dish you’re making?

Maddy: I was inspired to make Greek Fried Rice because it is a dish many are familiar with, but with a twist. I love using fresh herbs and citrus especially in the summer. It is light with simple flavors that I think many people will enjoy.

Q: What’s your cooking background?

Maddy: I grew up cooking with my mom. I was eager to help at any opportunity I could. Family gatherings were a place where food brought everyone together. As I grew up, I saw the joy food could bring to others. I was inspired by the endless possibilities and the connection it fosters.

I decided to pursue a culinary degree and have now worked in a handful of restaurants throughout Chicago.

Q: Anything else we should know about you and your cooking?

Maddy: I have a love for both the culinary and pastry side of food. Both offer different techniques and opportunities for creativity. No matter what I am making, food is a sign of being connected to those around us. It represents culture and background. It leads to conversations.

I also believe in sustainability and repurposing within my cooking. I enjoy finding ways food can be broken down and used in multiple ways while minimizing waste. For example, I take spent grains from local breweries that would otherwise be thrown out and convert them to flour. This can then be used for sauces, breads, doughs, etc.
