Q: What can you tell us about the dish you’re making and what inspired it?

Maria: I will be making traditional street-style fried or grilled Mexican quesadillas, with handmade corn tortillas—an authentic Mexican antojito. I enjoy making fresh homemade tortillas. They’re soft, chewy and completely addictive. Each week I’ll offer different fillings for meat lovers or vegetarians.

Q: Where’d you grow up? What kind of food did you grow up with?

Maria: I was born in Zacatecas, Mexico, but came here at the young age of 12. Although, I didn’t grow up much in Mexico, my parents raised me as such eating all kinds of traditional Mexican dishes.

Q: What’s your cooking background?

Maria: I’ve been cooking for over 40 years. Cooking for others is a huge part of my Mexican culture. I learned to cook traditional Mexican dishes at a young age by watching my mother and later picked up a few tricks from my husband Pedro, who is a huge foodie. Not to brag, but most people that try my cooking boast about it later. I love cooking and making people happy!

Q: Anything else we should know about you and your cooking?

Maria: I cook my dishes with love and hope to transmit that in every bite.
