Q: What’s your cooking background?
I started learning to cook as a child, but I truly found passion when I entered kitchens professionally at 16. I’ve found the most happiness cooking at home, using tools and skills I’ve learned – both at work and online watching other home cooks. I truly find the most happiness making food that makes others happy!

Q: What can you tell us about the dish you’re making and what inspired it?
This warm and inviting curry is made with coconut cream! I’ve found it’s a great substitution for heavy cream in these types of dishes. Creating a roux with butter and flour, I add in onions and garlic that I’ve sautéed. I then add the coconut cream and curry spices to simmer. Add in potatoes, carrots and green beans and let those flavors combine for this truly delicious and welcoming curry dish. Served over cilantro white rice. Spice levels on this dish are very minimal.

Q: Anything else we should know about you and your cooking?
I really love to make food that feels like home. That includes vegan, dairy free or sometimes just non allergen/non food sensitive dishes. I’m excited to take what I’ve learned and put it to use!
