Q: How did you first get interested in cooking?
Nathalie: My first job was working for my dad in a valet company when I was 16. I remember he would send me to all these fancy restaurants in Chicago to work valet. Since I would go through the back doors of these places, I would notice the movement of the kitchen.
What always interested me was the organized chaos every kitchen seemed to have. That, for sure, sparked a curiosity with food and what it would take to someday have my own. Ever since then I know I wanted to be part of one.
Q: What can you tell us about the meal you’re making and what inspired it?
Nathalie: If I had to pick a favorite keto meal, by far it would be fathead pizza. Pizza was the one thing I craved so much after being no carb, This pizza has 2/3 grams of carbs per slice. Really good if you’re trying to stay in ketosis.
Q: What kind of meals do you typically make?
Nathalie: The type of food I make is low-carb, clean eating, keto friendly dishes. I try to recreate typical foods that can be lowered in carbs so being keto doesn’t have to be boring and bland. Listen, we’re all tired of eating eggs and bacon, three meals a day.
Q: What’s your day job?
Nathalie: So besides being full time mom to 2 little wild girls, I work in a nursing home and manage a kitchen. I don’t know who is more demanding honestly. My residents or my girls. They can be brutal food critics!
Q: Anything else we should know about you and your cooking?
Nathalie: My goal is to eventually own a food truck. Now I’m working on starting a lifestyle vlog with all my recipes, my daily cooking hacks, and ups and downs about ketosis, cheat days and whatnot.
