Q: Where did you grow up and what kind of food did you grow up with?
Roberto: I was born and raised in an international hotel and gastronomic environment in Acapulco, Mexico. My grandmother won two awards for excellence in the hospitality environment and eventually became a chef in her own restaurant. She was always my inspiration when creating different dishes, both Mexican and international.
Q: What do you love about cooking?
Roberto: I like the versatility of the ingredients and how they integrate to create different flavors and experiences.
Q: What is your favorite food memory?
Roberto: The day I made her the marriage proposal and together we prepared an Italian-style dinner.
Q: Anything else we should know about you and your kitchen?
I love water-sports like a surfing and body boarding. I am always willing to learn and take risks to improve as a person and a chef. I have studied gastronomy at Kendall College and I stay at the forefront because I am self-taught. I believe that a good diet can heal you, just like making you sick.
