Q: What can you tell us about the dish you’re making and what inspired it?
Sheri: The dish I am making is a Peruvian inspired quinoa bowl. I love chimichurri, so I love to find ways to cook with it. I have recently became vegan (90%) and pescatarian on occasion, so I have only ever used chimichurri with beef, but I knew it would be delicious on a vegan dish. So I made a vegan quinoa bowl with grilled tofu and squash, roasted veggies and fresh chimichurri. It is protein and nutrient dense! The veggies are: baby zucchini, broccoli, cauliflower, onion, orange, yellow and purple carrot, sweet potato and shishito peppers. The quinoa has cucumber, tomato, red onion, orange bell pepper, chives and lime.

Q: What do you think about when you make this dish?
Sheri: When I made this dish, and when I make any dish, I always think about the colors. I like to say that I cook with the rainbow when I create a dish and that is exactly what I did today as well. It is flavorful and colorful, just like me! It is a fresh summer dish and makes you want to sit outside in the sunshine on a gorgeous day like today!
Q: What’s your favorite food memory?
Sheri: I grew up in Tucson, Arizona, so there is always a lot of Latin flair to my cooking. I am a self-described Mexican food snob and make the best guacamole you have ever had. Be nice and I will share my secret ingredient that some lovely Sonoran Mexican ladies taught me many years ago.
Q: What’s your cooking background?
Sheri: I am a self-taught cook. I am obsessed with watching cooking shows and inviting people over to try something I have made. I love to entertain and cooking for 1-2 is not the same as 10! I have been cooking since I was about 8 years old where I cooked with my mom, aunts and grandma. I always am looking for new recipes and people to teach me about their culture along with their food.
