Q: What can you tell us about the dish you’re making?
Yesenia: I am Mexican but am heavily inspired by Caribbean culture! I am making spicy vegan jerk nachos topped with sweet pineapple! I’ll be using jackfruit which is native to the West Indies and is packed with nutrients! We love us some tasty and healthy nachos!
Q: What do you think about when you make this dish?
Yesenia: While making this dish, I think about the Caribbean climate, the sweet fruit, the vibes, the reggae!

Q: Where did you grow up and what kind of food did you grow up with?
Yesenia: I grew up in Chicago. I loved my Mexican food at home but also all the food Chicago has to offer. Having traveled to many places, in and out of the U.S, I can honestly say Chicago food is top tier.
Q: What’s your favorite food memory?
Yesenia: I went to New Orleans for my birthday. It was my first time there. I usually keep a vegan diet but had to try their Fried Shrimp Po’ Boy Sandwich. It was delicious! I topped it with their Louisiana sauce and I have never been the same again. I remixed the dish into my own! I now make the vegan version of the Po’ Boy sandwich with hearts of palm and homemade coleslaw!
Q: Anything else we should know about you and your cooking?
Yesenia: I consider being able to feed people your food and have them like it, a blessing. I pour a lot of love into my food and am honored that people would want to grab a plate from “La Casa de Yesenia!”
